Trip to Colorado

So I am just going to state the obvious fact: Colorado is beautiful.

Every second that I was there, I was amazed by the scenery. The mountains were spectacular. The little village of Vail had the most beautiful buildings and cobblestone paths that made you feel like you were in some fairy tale winter wonderland. The people were so extremely friendly, literally everyone who saw me struggling with my bag (and I was hardcore riding the struggle bus) offered to help. Not only were the people so extremely helpful, but there was such a rich diversity of languages and accents that added so much more depth to the city of Vail.

One of my favorite things about the city of Vail was the ice skating rinks that were scattered all of the city. It was so fun to watch parents teaching their children to skate, young adults holding hands circling the rink and beginners trying something new for the first time. Every time I walked past the rink there was so much laughter and love that it was a probably a crime not to stop at take a picture or enjoy the scenery.

And I still cannot get over how stunning these light are at night! Such a magical feeling in the air being under those stars lights.

The city of Vail is only the beginning to how beautiful this place is. I went up the gondola, or as the locals call it - the gondy, and as expected saw some beautiful views.

My friend also made sure that we rode the gondy back down at sunset and I am so glad we did because the colors were spectacular that night. Highly recommend making sure you are never busy at sunset because they are something you do not want to miss. I mean, how can the sky even turn those colors? And then there are snow covered mountains outlining the horizon. It doesn't get much better than that! Big fan of these sunsets.

We also visited Breckenridge for a day trip. Just like Vail, there is such a cute village filled with coffee shops, bakeries, restaurants, art galleries, and so much more. ​On top of the excellent entertainment opportunities they also have a great medical facility there. If you get sick in Breckinridge I highly recommend them, here is a link to there site. I unfortunately got sick from the altitude, but the healthcare professionals were so nice, informative, and really wanted to help me enjoy the rest of my trip. Literally, they had me on oxygen for about a half an hour and all my altitude symptoms were gone. So there is a quick fix if you are finding your self in a pickle with altitude sickness and you can still enjoy your trip!

Once I felt better we enjoyed some good cuisine. For dinner in Breckinridge we visited a restaurant called Ember. The restaurant is chef-owned so the chef gets to make all of the fun combinations of food that you normally don't get to try.

I am not much of a foodie, but this meal was one of the most creative and unique meals in my life. And yes, the little critters in the bowl were crickets - and they tasted good. My dinner dish also had this amazing mango sauce that I am still dreaming about.

IF YOU GO TO EMBER YOU HAVE TO GET THE FLOWERLESS CHOCOLATE CAKE. (That is if the menu hasn't changed yet.) Without a doubt, this was my favorite dessert of all time. The cake was so dense and rich, but the best part was the sauce. The guava sauce had pop-rocks in it! Let's just say the plate was licked clean.
